3 c Dark leafy greens chopped (kale, arugula, spinach)
1/4 c Mint leaves, finely chopped
1/2 Fennel bulb, thinly sliced
1/2 c Beets, canned (no salt added) or fresh roasted
11 oz. Mandarine canned oranges, packed in 100% juice          
1 medium Avocado, cubed. 

Toss greens, fennel and mint leaves.

Top with beets, oranges and avocado.
 

Drizzle with EVOO and Fruity Balsamic Vinegar (or juice from the orange can)
Sprinkle with Feta or Goat Cheese (Optional)
Season with cracked Pepper & Himalayan Salt


Christmas Corn Chowder

INGREDIENTS

4-5 ears of corn on the cob (or thawed frozen corn)
1/2 a medium onion chopped
1/8 t chili powder
2-3 cloves garlic, minced
6 cups broth (chicken or vegetable)
1/3 c Greek yogurt (optional)
1/3 c grated Cotija cheese (or fresh parmesan)
1 fresh lime
Fresh cilantro
1 teaspoon grated lime zest
2 tablespoons plus 2 teaspoons chopped cilantro, divided
1 med tomato
Salt and freshly ground black pepper to taste

Sauté for 1-15 min the corn, garlic, onion, and chili powder until golden. Set aside 1 c. 
Add broth to lift the browned goodness from the bottom of the pan. Cook for 20-25 min.

Add Greek yogurt and cheese. Blend soup in a food processor, careful it will be hot, until creamy. Return to heat and simmer for 5 min along with the 1 cup of whole kernels set aside previously. 

Top with chopped tomato, 1 T Greek yogurt, cilantro and squeeze of fresh lime juice. S&P to taste.


Christmas Chocolate Chunk Cookies

Christmas Holiday Cookies: 

1 c oatmeal
1 c oat flour (blend oats in processor to make oat flour)
1/2 c coconut sugar
3 tablespoons organic honey
1/4 c coconut oil
1 tsp vanilla
1 egg
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1 c dark chocolate chunks
1 c pomegranate seeds (about the seeds from one large pomegranate) 
1/2 cup walnuts - optional

Beat together coconut oil, sugar, honey. Beat in egg and vanilla. Mix in flour, salt, baking soda, baking powder and oats. Then mix in chocolate chunks. Gently with a spoon or spatula fold in pomegranate seeds (if you mix too roughly the seeds will burst and turn the dough pink) 

Spoon onto baking sheet, press on top of each cookie a few chocolate chunks and seeds.  
Bake 375 for about 8 mins. Let cool on pan.

Cilantro Lime Hummus

2 c canned garbanzo beans (drain, but save the liquid and set aside) 
1/3 c tahini
1/4 c lime juice (or lemon if you prefer that better)
1 t salt
2 cloves garlic, halved
1 T olive oil
1 pinch paprika
1/3 c chopped cilantro

Place garbanzo beans, tahini, lime or lemon juice, salt and garlic in a blender or food processor. Pulse and then blend until smooth. Blend while adding reserved liquid until you reach your desired consistency. You can also add in the cilantro or other flavors you desire. 

Transfer mixture to a serving bowl.
Drizzle olive oil over the garbanzo bean mixture and sprinkle with paprika. 

Serve with fresh veggies! (tiny cucumbers are a fun easy way to bring veggies to any party, serve to kiddos or have with a friend.
